Ingredients
For Kat
Oil - तेल - 5 tbsp
Cumin Seeds - जीरा - 1 tsp
Cinnamon - दालचीनी - 1 inch stick
Green Cardamom - छोटी इलाइची - 2
Cloves - लौंग - 2
Black Pepper - काली मिर्च - 7-8
Black Cardamom - बड़ी इलाइची - 1
Coriander Seeds - साबुत धनिया - 1 tbsp
Poppy Seeds - खस खस - 1 tbsp
Coconut - नारियल - 1/4 Cup, grated
Ginger - अदरक - 1 tsp, grated
Tomato - टमाटर - 2, chopped
Salt - नमक - 1/2 tsp + 3/4 tsp
Turmeric Powder - हल्दी पाउडर - 1/2 tsp
Asafoetida - हींग - 1/2 a pinch
Kashmiri Red Chilli - कश्मीरी लाल मिर्च - 2 tsp

For Vada Batter
Gram Flour - बेसन - 1 Cup
Rice Flour - चावल का आटा - 2 tbsp
Turmeric Powder - हल्दी पाउडर - 1/4 tsp
Red Chilli - लाल मिर्च - 1/4 tsp, coarsely ground
Salt - नमक - 1/2 tsp
Asafoetida - हींग - 1/2 pinch
Baking Soda - बेकिंग सोडा - 1/2 pinch

For Vada Stuffing
Oil - तेल - 1 - 1.5 tbsp
Mustard Seeds - सरसों - 1/2 tsp
Asafoetida - हींग - 1 pinch
Ginger - अदरक - 1 tsp, grated
Green Chilli - हरी मिर्च - 2, finely chopped
Curry Leaves - कड़ी पत्ता - 10 - 12
Turmeric Powder - हल्दी पाउडर - 1/2 tsp
Potato - आलू - 7, (1/2 Kg), boiled
Salt - नमक - 1 tsp
Dry Mango Powder - अमचूर पाउडर - 1/2 tsp
Garam Masala - गरम मसाला - 1/4 tsp
Coriander Leaves - धनिया पत्ता - 2-3 tbsp

How to prepare Kolapuri Kat vada?

1. Add 1 tbsp of oil, 1 tsp of cumin seeds, 1-inch cinnamon stick, 2 green cardamoms, 2-cloves, 7-8 black pepper, 1-black cardamom, 1 tbsp of coriander seeds, and 1 tbsp of poppy seeds to the pan.
2. Roast the spices over low heat. Add 1/4 cup of grated coconut and 1 tsp of grated ginger to the pan and roast a little.
3. Add 2 chopped tomatoes, 1/2 tsp of salt, and cook covered for 2-3 minutes over low heat.
4. Stir the tomatoes and cook covered for another 2 minutes.
5. Heat 1 to 1.5 tbsp of oil in the pan.
6. Add 1/2 tsp of mustard seed to the oil and roast till crackles.
7. Add 1 pinch hing, 1 tsp of grated ginger, 2 green chilies, 10-12 curry leaves, and roast briefly.
8. Add boiled and mashed potatoes, less than 1/2 tsp of salt, 1/2 tsp of dry mango powder, 1/4 tsp of garam masala, and mix everything over medium heat.
9. Add 2-3 tbsp of green coriander and roast the stuffing for 5 minutes.
10. Add 1 cup of besan, 2 tbsp of rice flour, 1/4 tsp of turmeric powder, 1/4 tsp of crushed red chili, 1/2 tsp of salt, 1/2 pinch hing, and 1 pinch baking soda to a bowl.
11. Add water gradually and prepare a pouring consistency batter. Leave the batter for a few minutes.
12. Apply a little oil to your hand, take out a little mixture, and bind the mixture to give Vada shape.
13. Blend tomato masala in the mixer once cool.
14. Hea 4 tbsp of oil in the Kadai. Add 1/4 tsp of turmeric powder, 1/2 pinch hing, and roast slightly.
15. Add blend masala, 2 tsp Kashmiri red chili to the Kadai, and fry the masala till the oil separates.
16. Add 2.5 cups of water, 1/2 tsp of salt, chopped coriander leaves to the sabzi, and simmer for 7 minutes.
17. Heat oil in the Kadai for frying vadas. Take 1 aloo Tikki, dip it in the batter, and drop in the medium-high hot oil.
18. Once golden brown from all sides, take them out and each batch will take 4-5 minutes.
19. Pour hot kat into the plate, add vadas, green coriander, and Sev to it.
20. Kat vadas are ready to be served.
