Black eyed peas cooked in spicy tangy masala.SPICY LOBIAIngredients1 cup black eyed peas (lobia)¼ tsp turmeric powder2 tsps coriander seeds1 tsp cumin seeds5-6 dried red chillies¼ cup scraped fresh coconut1 tbsp oil1 medium onion, roughly chopped3 green chillies2 tsps finely chopped garlic1 tsp sugar1 tsp tamarind pasteMethod1. Heat sufficient water in a deep non-stick pan. Add black eyed peas and turmeric powder, mix well and boil.2. Dry roast coriander seeds and cumin seeds till fragrant. Remove from heat and cool.3. Grind together dry roasted spices alongwith red chillies and coconut into a smooth paste.4. Heat oil in a non-stick pan. Add onion and saute well.5. Slit green chillies into halves lengthwise and add to the pan alongwith garlic and saute for 2 minutes.6. Add ground paste, mix well and sauté for 2 minutes. Add boiled black eyed peas alongwith the stock and stir to mix.7. Add sugar and tamarind paste and mix well. Simmer for 3-4 minutes.8. Serve hot.
