Noodles served with spicy soya granule mixture

SPICY NOODLES IN A BOWL

Ingredients

200 gms noodles, boiled
4 tbsps oil
1 cup chopped onions
4 tsps chopped garlic
4 tsps chopped ginger
8 tbsps soya granules, soaked in warm water and drained
8 spring onions
8 tsps red chilli paste
Salt to taste
4 tbsps honey
8 tsps chilli oil
4 tsps vinegar
4 tsps sesame oil

Method

1. For each portion, heat 1 tbsp oil in a non-stick wok. Add ¼ cup chopped onion, 1 tsp chopped garlic and 1 tsp chopped ginger and saute.
2. Heat 2 cups water in a pan.
3. When the onions soften, add 2 tbsps soya granules and mix. Add 2 tbsps water and mix.
4. Add ¼ of the boiled noodles to hot water and let them get heated through.
5. Slice 2 spring onions.
6. Add 2 tsps red chilli paste to the wok, along with salt, ¼ cup water and mix. Add 1 tbsp honey and mix.
7. Add salt to the noodles along with 1 tsp chilli oil and mix.
8. Lift the noodles from hot water and put into a serving bowl.
9. Add 1 tsp vinegar to the soya mixture and mix. Add 1 tsp sesame oil and mix. Put this mixture over the noodles in the bowl.
10. Garnish with spring onions, drizzle 1 tsp chilli oil and serve immediately.
11. Prepare 3 more portions similarly.
