Ingredients of Nutri Kulcha Curry
Kulche - 5
Soya Nuggets - 1 cup (650 gms)
Tomatoes - 4 (350 gms)
Green Chillies - 2 (finely chopped)
Ginger - 2 (grated)
Oil - 2 tbsp
Butter - 1 tbsp
Ghee - 1 tbsp
Coriander Leaves - 2 tbsp
Cumin Seeds - ½ tsp
Coriander Powder - 1 tsp
Red Chilli Powder - ½ tsp
Mango Powder - ¼ tsp
Garam Masala - ½ tsp
Cumin Powder - ½ tsp
Soya Sauce - 1 tsp
Tea Bag - 1
Salt - 1 tsp (or to taste)

How to Nutri Kulcha Curry
1- Preheat 2 to 2.5 cups of water in a vessel. Add 1 tea bag to it.
2- Add ½ teaspoon of salt to it and 1 cup of soya nuggets too.
3- Mix them well and boil for 10 minutes till they are soft.
4- Drain out the boiled soya nuggets on a strainer over a bowl.
5- Remove the tea bag from it.
6- Press the boiled nuggets using a spoon to remove extra water from it.
7- Preheat a pan to make the masala mixture.
8- Add 2 tablespoons of oil to the pan.
9- Prepare a paste of 4 tomatoes, 2 green chillies and a ½ inch of ginger.
10- Add ½ teaspoon of cumin seeds in the heated oil and roast it.
11- Add the prepared paste, 1 teaspoon of coriander powder, ½ teaspoon of red chilli powder to it.
12- Add ½ teaspoon of cumin powder, ¼ teaspoon of mango powder to it and roast them till oil separates from them.
13- Add 1 teaspoon of dry fenugreek leaves after crushing it.
14- Add ½ teaspoon of Garam Masala, 1 teaspoon of soya sauce and saute them.
15- Add 1 tablespoon of clarified butter to it and stir till it melts.
16- Add the boiled soya nuggets to it along with ½ teaspoon of salt.
17- Add tea water to it and cook till they appear thick.
18- Add 1 tablespoon of butter and finely chopped green coriander to it.
19- The Soya Nuggets Curry is ready to be served.
20- Apply some clarified butter on a pan to cook Kulchas.
21- Add Kulcha on it and cook while stirring it.
22- The Nutri Kulcha is ready to be served.

Serving:
1- Serve them along with Green Coriander Dip.
