SRI LANKAN PRAWNS CURRYIngredients16-20 medium prawns, peeled and deveined, tails intact2 tbsps coconut oil1 inch cinnamon stick tsp fenugreek seeds2 medium onions, sliced1 tbsp chopped ginger1 tbsp chopped garlic1 tbsp chopped lemongrass1 pandan leaf, roughly chopped10-15 curry leaves1 medium tomato, chopped tsp turmeric powder tsp red chilli powder1 tbsp curry powderSalt to taste2 cups prawn stock2-3 green chillies, slit1 cup coconut milkCrushed black peppercorns to tasteFresh coriander sprig for garnishSteamed rice for servingMethod1. Heat coconut oil in a pan. Add cinnamon, fenugreek seeds and saut for a few seconds.2. Add onions and saut till golden brown. 3. Add ginger, garlic and saut for a minute.4. Add lemongrass, pandan leaf, curry leaves and mix well.5. Add tomato and mix well. Cook on medium heat till soft and pulpy.6. Add turmeric powder, red chilli powder, curry powder and salt and mix well.7. Add prawns and mix well. Add prawn stock, green chillies and mix well.8. Once the mixture comes to a boil, lower the heat and cook for 4-5 minutes.9. Add coconut milk, crushed black peppercorns and mix well. Cook for 2-3 minutes.10.
