STEAMED EGGS WITH DATES AND BANANA SMOOTHIEIngredients4 eggsSalt to taste½ medium green capsicum, seeded and chopped½ medium red capsicum, seeded and chopped½ medium yellow capsicum, seeded and chopped2 spring onionsCrushed black peppercorns to taste1 cup seedless dates2 tbsps sunflower seeds8-10 walnuts2 cups almond milk2 tsps instant coffee powder2 elaichi bananas1 tbsp butter4 chicken sausages8-10 cherry tomatoes4 toasted multigrain bread slices, cut into trianglesAvocado Slices for servingOrange segments for servingGreen capsicum juliennes for garnish2 tsps chia seedsMethod1. Heat sufficient water in a steamer. 2. Separate the egg yolks and whites and add salt to the whites. Add green capsicum, red capsicum, and yellow capsicum. 3. Chop the spring onions and add to the egg mixture. Add crushed peppercorns and whisk the mixture well.4. Transfer in individual silicone moulds and steam for 8-10 minutes. 5. For the smoothie, transfer the dates in a blender jar. Add sunflower seeds, walnuts, almond milk and coffee powder.6. Peel the bananas and slice and add to the jar. Blend to a smooth mixture. 7. Heat butter in a nonstick pan. Place the chicken sausages and cherry tomatoes and sauté for 2 minutes.8. Arrange the multigrain bread slices, avocado slices, orange segments and tossed sausages on a serving plate. Place the cherry tomatoes on the sausages.9. Demould the steamed egg mixture over the bread slices and garnish with green capsicum juliennes.10. Transfer the smoothie in a serving glasses and top up with chia seeds. 11.
