Sticky Date Pudding | Sanjeev Kapoor Khazana

This irresistible sticky date pudding is an all-time favourite dessert– and moreover so easy to make. Make this delicious dessert for your loved ones and you are guaranteed to bring a smile on their faces!

STICKY DATE PUDDING

Ingredients

¾ cup chopped dates
½ tsp baking soda
½ cup butter
1½ cup brown sugar
2 eggs
1 tsp vanilla essence
1½ cups refined flour
¾ cup fresh cream
1 tbsp butter
Scoop of ice cream for garnish
Mint sprig for garnish

Method

1. Mix together chopped dates and baking soda along with sufficient water to soak. Set aside.
2. Beat together butter and cup brown sugar using an electric beater until creamy.
3. Break in the eggs and add vanilla essence, beat together till well incorporated.
4. Add refined flour and fold with spatula for a lump free batter.
5. Add the soaked dates and fold again.
6. Pour the prepared batter in a lined baking dish and bake at 180˚C for 10-15 minutes.
7. Heat the remaining brown sugar in a non-stick pan and caramelise. Add fresh cream and mix well. Add butter and mix till it melts well.
8. Pour the prepared sauce over the pudding and bake again at 180˚ for 45-50 minutes.
9. Serve with a scoop of vanilla ice-cream, garnished with a mint sprig.
