Simple, sweet, spicy, soul-satisfying Stir fried Chicken is what you need to liven your meal! STIR FRIED CHICKENIngredients300 grams boneless chicken breasts250 grams broccoli10-12 button mushrooms2 spring onion greensSalt to taste1 tbsp blended sesame oil1 tbsp chopped garlic1½ tbsps oyster sauce½ tsp green chilli sauceA dash of dark soy sauceMethod1. Cut broccoli into medium sized florets and set aside. Cut the mushrooms in halve and set aside. 2. Chop spring onions greens and set aside. Cut chicken into 1 inch cubes and set aside. 3. Bring sufficient water to a boil in a deep pan, add salt and add broccoli and blanche for 2 minutes and drain into ice cold water. 4. Heat oil in a non-stick wok, add garlic and mix well. Add the chicken and sauté on high heat for a minute.5. Add mushrooms and sauté well. Add salt and mix well, cook for 4-5 minutes on high heat, sautéing occasionally. 6. Add oyster sauce, green chilli sauce and dark soy sauce and mix well. Cook for 1 minute. Add broccoli and sauté for 2 minutes. Add ½ of the chopped spring onion greens and mix well. Take the pan off the heat.7.
