A must-try for mushroom and tofu lovers, bursting with flavours, is a heart-warming side dish to your weeknight meals.STIR-FRIED SPICY MUSHROOM WITH TOFUIngredients 2-3 dried shiitaki mushrooms, soaked for 30 minutes in hot water6-8 button mushrooms, cut into quarters 250 grams silken tofu 1½ tablespoons oil 5-6 almonds1 inch ginger, crushed 1 tablespoon thinly sliced garlic Salt to taste Black pepper powder to taste 1 teaspoon dark soy sauce1 teaspoon veg oyster sauce1 teaspoon light soy sauce1 tablespoon Schezwan chilli sauce1 teaspoon rice wine vinegar1 teaspoon sesame oil 2-3 tablespoons cornstarch slurry Chopped spring onion greens for garnishingMethod1. Heat 1 tablespoon oil in a non-stick pan. 2. Slice almonds, add to oil and sauté till golden brown and crisp. Drain on absorbent paper. 3. Heat remaining oil in the same non-stick pan. Add ginger and garlic to the same oil and sauté for 1 minute.4. Drain, discard the stems and slice shiitaki mushrooms and reserve its water. 5. Add the sliced shiitaki mushrooms, button mushrooms, salt, pepper powder, dark soy sauce, veg oyster sauce, light soy sauce and 3-4 tablespoons water to pan, mix and cook for 5-6 minutes. 6. Add Schezwan chilli paste, mix and cook for 1 minute. Add 2-3 tablespoons of reserved shiitaki mushroom water, mix and cook for 1 minute. Add rice wine vinegar and sesame oil, mix and cook for 1 minute.7. Cut tofu into ½ inch cubes, add to the pan, cover and cook for 5 minutes. Add cornstarch slurry, lightly mix and cook till the mixture slightly thickens.8. Serve hot garnished with spring onion greens and fried almonds.
