Strawberry Cheesecake | Cook It Up With Tiffany | Sanjeev Kapoor Khazana

Learn to make a delicious no-bake Strawberry Cheesecake with American Celebrity Chef Tiffany Derry.

STRABERRY CHEESECAKE

Ingredients

1½ cups gram cracker crumbs
3-4 tbsps melted butter
1 tbsp castor sugar
A pinch of salt
Strawberry slices for garnish
1 cup fresh strawberry sauce
Cheesecake filling
1 cup cream cheese, room temperature
⅔ cup castor sugar
1½ cups mascarpone cheese
1 tsp vanilla extract
1 tsp lemon juice
A pinch of salt
1½ cups whipped cream

Method

1. In a bowl, add gram cracker crumbs, melted butter and 1 tbsp castor sugar, salt and mix well till it resembles wet sand. Set aside.
2. In a large bowl, add cream cheese, sugar, mix till well combined and add the mascarpone cheese and gently mix it.
3. Add vanilla extract, lemon juice and mix well. Add a pinch of salt and mix well.
4. Add a portion of the whipped cream and fold the mixture till well combined. Add the remaining mixture and fold well. Refrigerate for 5-10 minutes.
5. For instant cheesecake, in a serving glass, add the crumb mixture and press down in the bottom. Add dollops of prepared cream cheese mixture and top it with sliced strawberries and drizzle a little fresh strawberry sauce on top. Garnish with crumb mixture and serve.
6. For a classic cheese, add the crumb mixture in a spring foam cake time and press it down in the bottom. Refrigerate for 10-15 minutes.
7. Add the fresh strawberry sauce in the prepared cream cheese mixture and pour it in the cake tin and spread it evenly. Refrigerate till set.
8. Garnish with strawberries, cut slices and serve.
