@zeetheintrovert Strawberry Crunch Cake Cookies (*strawberry emoji*) Ingredients 1 box strawberry cake mix 2 large eggs cup vegetable oil or oil of choice 1 tsp vanilla extract package graham crackers Freeze-dried strawberries 3 Tbsp unsalted butter, melted Cream cheese or vanilla icing (I used Duncan Hines) Preparation -Preheat the oven to 350F (180C). Line a baking sheet with parchment paper. -Add cake mix, eggs, oil and vanilla to a large bowl. Mix until fully combined. -Scoop the cookies onto the prepared baking sheet, spacing evenly. Bake for 12-14 minutes, then let cool for a few minutes. -Add the graham crackers, some freeze-dried strawberries, and the melted butter to a food processor. Process until finely ground. Transfer to a shallow bowl. -Microwave the icing in 15-second intervals until melted. Transfer to a shallow bowl. -Dip the tops of the cookies in the icing, then in the strawberry crumb mixture to coat. -Enjoy!
