Strawberry Spinach Salad

Strawberry Spinach Salad is packed with nutrient-loaded fresh fruits and veggies. Leafy spinach, juicy strawberries, crunchy onions, and a touch of salty bacon and feta marry wonderfully with our sweet yet tangy homemade poppy seed dressing.

Ingredients

Salad:
12 ounces baby spinach leaves
8 ounces strawberries hulled, sliced
1/2 red onion thinly sliced
1/2 cup bacon cooked and crumbled
1/2 cup pecans candied
1/2-1 cup feta cheese crumbles

Poppy Seed Dressing:
1 cup extra-virgin olive oil
1/2 cup balsamic vinegar
1/4 cup honey
1/4-1/2 red onion small
1 tablespoon ground mustard
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons poppyseeds

Instructions

1 In a large salad bowl, add in spinach and layer on sliced strawberries, red onion, candied pecans, bacon and feta.

2 Pour dressing over prepared salad and enjoy!

Poppy Seed Dressing
1 In a blender, add in olive oil, balsamic vinegar, honey, red onion, mustard, salt and pepper.

2Blend on medium-high speed for 45-60 seconds until onion is smooth in the mixture. Stir in poppy seeds.

Notes:

Candied Pecans Recipe:
1 Take 1 cup of raw pecans and add them to a bowl.
2 Mix in 1/4 cup of white sugar, 1/4 of brown sugar, 2 tablespoons of melted, salted butter and a pinch of cinnamon. Mix all together getting pecans coated.
3 In a skillet over medium high heat, cook the coated pecans for 4-5 minutes constantly stirring them. Mixture will darken and adhere and candy to the pecans.Watch closely.
4 Transfer to a parchment lined sheet and let cool.
