Matka Dal Chawal

Ingredients for Dal:
Chana Dal (washed & soaked) ½ cup
Masoor Dal (washed & soaked) ½ cup
Moong Dal (washed & soaked) 1/2 cup
Water 2 L
Onion (sliced) 1 cup
Tomato (peeled and chopped) 1 cup
Garlic cloves 4
Cumin seeds ½ tbsp
Red Chili Powder 1 tbsp
Turmeric Powder 1 tsp
Salt ½ tbsp or to taste
Tadka as required

Green Chutney:
Mint leaves 1 cup
Green Coriander 2 cups
Green Chilies 4-5
Garlic cloves 3
Cumin seeds 1 tsp
Pomegranate Seeds (dried) 1 tbsp
Salt ½ tsp or to taste
Chaat Masala 1½ tsp
Water as required

Ingredients for Chawal:
Guard Basmati Rice 2 cups
Water (for soaking) as required
Oil ¼ cup
Ginger Garlic Paste 1 tbsp
Whole Spices 1 tbsp
Water 3 cups
Salt 1 tsp
Rice (soaked) 2 cups
Green Chilies 3


Ingredients for Plating:
Rice
Dal
Chutney
Salad (Onion, cabbage, Lemon)

Directions for Daal Preparation:
In a large pot, add water, chana dal, mung dal, masoor dal and bring it to boil.
1. Skim off the scum ad add onion, tomatoes, garlic, cumin seeds, red chili powder, turmeric powder and mix well. Partially cover with lid and cook until dal gets tender over medium low heat.
2. Now add salt, tadka and give it a good mix. Your daal is ready.
Directions for Green Chutney Preparation:
3. In a jar add mint leaves, coriander, green chilies, garlic, cumin seeds, pomegranate seeds, salt, chaat masala, water and blend well into smooth paste. Your Green Chutney is ready. Set aside.
Directions for Chawal Preparation:
4. Soak Guard Basmati Rice in a bowl for 20-25 minutes.
5. Heat oil in a pot, add ginger garlic paste and cook for a minute.
6. Add whole spices and cook for another minute. Add water and salt and bring it to a boil.
7. Once the water starts to boil, add soaked rice and cook until 80% water has evaporated.
8. Add green chilies and cover with a lid. Steam for 12-15 minutes.
9. Left off the steam.
10. Add steaming hot rice into a matka. Pour over dal, and top with green chutney and salad. Serve and Enjoy.
