INGREDIENTS:
For Boiling:
* Chickpea - 2 bowls
* 1 Tea Bag or Dried amla 2-3 pcs
* Bay Leaf - 1
* Salt - as per taste
* Black Cardamom(बड़ी इलाइची) - 1

For Chhole:
* Black Salt(काला नमक)
* Salt(नमक) - as per taste
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च)
* Coriander Powder(धनिया पाउडर) - 2 tsp
* Dry Mango Powder(अमचूर पाउडर) - 1 tsp
* Sliced Ginger pcs
* Roasted Cumin Powder(भुना जीरा पाउडर) -1 tsp
* Chole Masala(छोले मसाला) - 2 tbsps
* Grated Ginger(अदरक)
* Ghee(घी)
* Mint Leaves

For Chole Gravy:
* Oil(तेल)
* Turmeric Powder(हल्दी पाउडर)
* Red Chilli Powder(लाल मिर्च पाउडर)
* Chickpea Water(छोले का पानी)
* Mashed Chhole / Mashed Potato

For Tikki:
* Boiled Potato- 4-5 pcs
* Ragi Powder - 1/2 cup OR Cornflour - 4 tbsp
* Rice flour - 1-2 tbsps
* Refined Oil(तेल) - 4 tbsp
* Cumin Seeds(जीरा)
* Red chilli Powder
* Salt - as per taste

For Garnishing/Serving:
* Onion chopped
* Green Chilli(हरी मिर्च)
* Lemon Juice
* Tomato sliced (टमाटर)
* Coriander Leaves(धनिया पत्ती)
* Sweet Chutney (मीठी चटनी)
* Green Chutney (हरी चटनी)
* Papdi (पापड़ी)
* Curd (दही)
* Red Chili Powder (लाल मिर्च पाउडर)
* Cumin Seeds Powder (Zeera)
* Black Pepper Powder (काली मिर्च पाउडर)
* Black Salt (काला नमक)

RECIPE:
1. Boiling - Soak Chickpeas overnight. Put them in the pressure cooker, put Dry Amla, Bay leaf, Salt, Black Cardamom, in it and boil them by giving 2-3 whistles until chole turn soft and mussy.
2. Put the boiled Chickpeas in the strainer and then put them in a bowl.
Put Black Salt, Salt, Kashmiri Red Chili Powder, Coriander Powder, Mango Powder, Roasted Cumin Powder, Chhole Masala, Crushed Red Chilli, Grated Ginger, Ghee on Chhole and mix them well.
3. For Chhole Gravy - In a pan, put Oil, Turmeric Powder, Red Chili Powder, Boiled Chhole Water, mashed chhole and put it on gravy.

Tikki:
Combine all the ingredients in a bowl and mix well. Prepare tikki/ cutlets. Sallow fry until crisp from both sides.

For Serving
In a plate, put the Chhole, place crispy tikkis, add some Sweet Chutney, Green Chutney, Crushed Papdi, thick Curd. Add Chopped onions, sliced tomatoes, lemon juice and lemon wedges. Again put some chhole, Sweet, and Green Chutney on it. put some Red Chilli Powder, Black Pepper Powder, Black Salt and garnish it with some Namkeen Sev on it and serve the very tasty Chaat.
