STREET-STYLE GOL GAPPAY
Ingredients for dough:
All-purpose flour 1 cup
Semolina 1 cup
Salt 1 tsp
Water Luke warm as required

Ingredients for Green chutney:
Mint leaves 1/2 cup
Green coriander 1 cup
Green chillies 3,4
Salt 1/2 tsp
Black pepper powder 1/2 tsp
Water as required

Ingredients for Meethi chutney:
Aloo Bukhara dried and soaked 2 cups
Dry ginger 1/2 tbsp
Salt 1/2 tsp / to taste
Sugar 2 tbsp
Water 3 tbsp
Red Chilli flakes 1 tsp
Red Chilli powder 1/2 tsp

Ingredients for Filling:
Boiled White chickpeas 2 cups
Boiled potato cubes 2 cups
Onion (Chopped) 1/2 cup
Green coriander (chopped) 1/4 cup
Chaat masala 1 tsp

Ingredients for Khatta pani:
Tamarind water 1 cup
Water 5-6 cups
Carom seeds 1/2 tsp
Salt 1/2 tsp / to taste
Red Chilli powder 1/2 tsp
Chaat masala 1 tsp
Black salt 1/2 tsp

Ingredients for Assembling:
Prepared dough
Oil (for frying) as required
Khatta pani as required
Filling as required
Green chutney as required
Meethi chutney as required
Sev as required

Directions for Dough Preparation:
1. In a bowl add flour, semolina, salt, water and knead a smooth dough. let it rest for 15-2 mins.
Directions for Green Chutney Preparation:
2. In a glass jar add mint leaves, green coriander, green chilies, salt, black pepper powder, water and blend it well. your green chutney is ready.
Directions for Meethi Chutney Preparation:
3. In a glass jar add aloo Bukhara, dry ginger, salt, sugar, water, red chili flakes, red chili powder and blend it well into smooth paste. Your meethi chutney is ready.
Directions for Filling Preparation:
4. In a bowl add white chickpeas, potatoes, onion, green coriander, chaat masala and mix it well. Your gol gappa filling is ready.
Directions for Khatta Pani Preparation:
5. In a pot heat water, tamarind water, carom seeds, salt, red chili powder, chaat masala, black salt and mix it well. Cook until it starts to boil.
6. Let it cool at room temperature. Your khatta pani is ready.
Directions for Assembling:
7. Take the prepared dough, divide it into 2 parts. Take one part and make a dough ball.
8. Roll it out into flat and thin sheet. Now cut small circles from it.
9. Deep fry the circular dough pieces until they are puffed and golden brown in color. Remove from oil and let them cool at room temperature.
10. Now take the prepared gola gappa, break it from center, fill it with aloo filling, meethi chutney, green chutney, sev. Dip it in khatta pani and enjoy. Your Street Style Gol Gappay are ready.
