Bharwan karela
Masala Bharwan Karela is a Punjabi delicacy that will make even kids fall in love with karela. It is best Served with rotis , dal and rice to make a homely and satisfying meal.

Ingredients Quantity

Bitter Gourd (karela) 6-8 small
Salt 1 Tsp
Turmeric powder ½ tsp
For Filling:
Oil 1 tbsp
Cumin seeds 1 tsp
Cashew nut chopped 2 tbsp
Raisin 1 tbsp
Chopped Ginger 1 tsp
Green chilli chopped 2 no
Potatoe boiled and mashed 1no. (Large)
Red chilli powder ¼ tsp
Turmeric powder ¼ tsp
Dry mango powder ½ tsp
Salt to taste
For dry masala
Coriander powder 1 ½tbsp
Red chilli powder 1 Tsp
Dry mango powder 1 tsp
Turmeric powder ¼ Tsp
Garam masala powder 1 tsp
Salt ¼ tsp
For karela
Oil 2 -3 tbsp
Garlic chopped 1 Tbsp
Ginger chopped 1 Tbsp
Ajwain ½ Tsp
Potato wedges 2 nos
Onion cube 4 small
Green chilli slit 4-5 no.
oil 1 Tbsp

Method:-
1. Scraped the karela silt and open and remove all seeds to make pockets.
2. Take the karela in a bowl and add 1 Tsp salt and ½ tsp of turmeric. Massage the keralas thoroughly. And keep to rest for 15-20 mins.
3. Heat oil in a pan, cumin seeds and sauté till it splutters.
4. Add cashewnuts and raisins , sauté till raisins puff up.
5. Add in the ginger chopped, green chilli and sauté for 30 sec.
6. Add potato and mix well.
7. Now add red chilli powder, turmeric powder, amchur powder and mix well and cook for 1 min.
8. Remove it in a bowl and keep aside.
9. In another bowl take, coriander powder, red chilli powder, Dry mango powder, turmeric powder, garam masala powder and mix well. Keep aside.
10. Take the karela bowl and add some water, and wash well for 1-2 times.
11. Spread a kitchen towel and pat dry the keralas.
12. Now stuff karela with prepared stuffing and keep aside
13. Heat oil in another pan and placed stuffed karela on it, with filling side up. Grill the kaerals on medium flame.
14. Add potato wedges, cover and cook for 12-15 mins.
15. Remove the cover and flip the karelas and potatos.
16. Add garlic , ginger , ajwain and mix well and sauté for 1 mins.
17. Now add in the onion cube, green chilli slit and mix well. Cook for 2-3 mins
18. Add the prepared dry masala and mix well. Cook for 1 mins.
19. Remove it in serving plate and serve hot.
