Baking bread at home is made easy with this simple stuffed burger buns recipe.

STUFFED BURGER BUNS - (Serves - 4)

Ingredients

1½ cups refined flour (maida)
2 teaspoons dry active yeast
Salt to taste
A pinch castor sugar
2 teaspoons olive oil
4 cheese slices
2 medium tomatoes, cut into roundels
Milk for brushing
White sesame seeds for sprinkling
Melted butter for brushing
Tikki mixture
2 medium raw bananas, boiled, peeled and mashed
1 tablespoon oil + for shallow-frying
1-2 green chillies, finely chopped
5-6 French beans, chopped
½ medium green capsicum, finely chopped
½ cup green peas, boiled and coarsely crushed
¼ teaspoon turmeric powder
1 teaspoon red chili powder
½ teaspoon garam masala powder
½ teaspoon sugar
Salt to taste
2 teaspoons chopped fresh coriander leaves
½ cup dried breadcrumbs

Method

1. Take 1½ cups flour in a bowl. Make cavity in the center, add dry active yeast, salt, castor sugar and 2-3 tablespoons warm water and mix well. Add sufficient water and knead into a soft dough.
2. Add 1 teaspoon olive oil and knead well. Cover with a cling film and set aside to prove for 15-20 minutes.
3. To prepare tikki mixture, heat 1 tablespoon oil in a non-stick pan. Add green chillies, French beans and capsicum and sauté for 2 minutes. Add green peas and mix.
4. Add bananas, turmeric powder, chilli powder, garam masala powder, sugar and salt, mix and cook for 1-2 minutes. Add coriander leaves and mix well. Transfer in a bowl and cool.
5. Divide the mixture into equal portions and shape into tikkis.
6. Take breadcrumbs on a plate and coat each tikki with it.
7. Heat some oil in a non-stick pan. Place the tikkis and shallow-fry from both sides till golden brown and crisp. Drain on absorbent paper.
8. Preheat oven to 180° C.
9. Take dough on the worktop, add remaining olive oil, knock back to release excess air and knead well.
10. Divide the dough into equal portions. Dust the worktop with some flour and roll out each portion into small thick disc.
11. Place 1 cheese slice, 2 tomato roundels and 1 tikki in the center of each disc, bring the edges together, seal and shape into buns.
12. Place large size aluminium foil ring moulds on a baking tray and place one stuffed bun in each mould. Cover with damp muslin cloth and set aside to prove for 10-15 minutes.
13. Discard the aluminium oil moulds from proven buns. Brush some milk and sprinkle some sesame seeds on top.
14. Put the tray into the preheated oven and bake for 15-20 minutes.
15. Brush some melted butter on top and serve hot.
