Personal take on the classic lonkar pakoda , chili’s stuffed with spicy dal mix and fried to make the perfect monsoon snack.STUFFED LONKAR PAKODAIngredients10-15 bhavnagri chillies, stems intact1 cup Bengal gram (chana dal), soaked and drained1 tsp cumin seeds2 tsps coriander seedsA pinch of asafoetida1-2 green chillies, finely chopped½ inch ginger, finely chopped1 tsp chopped garlic½ tbsp sugarSalt to taste1 tbsp mustard oilOil for deep fryingTomato ketchup to serveGreen chutney to serveBatter1 cup Tata Sampann Fine BesanSalt to taste½ tsp red chilli powder¼ tsp turmeric powder½ tsp cumin powderMethod1. Slit the green chilli in the centre without cutting through, discard the seeds and set aside.2. In a blender jar, add chana dal, cumin seeds, coriander seeds, asafoetida, green chillies, ginger, garlic, sugar, salt and a little water. Blend to a coarse paste.3. Heat mustard oil in a non-stick pan, let it smoke. Add the prepared paste and sauté well. Cook till the moisture evaporates and forms one mass, sautéing continuously.4. Transfer the mixture on a plate and allow to cool to room temperature.5. Heat sufficient oil in a kadai, meanwhile, add Tata Sampann Fine Besan, salt, red chilli powder, turmeric powder andcumin powder and sufficient water in alarge bowl. Whisk to form a batter of coating consistency. Set aside.6. Stuff each chilli with a portion of the prepared stuffing, dip each into the prepared batter and coat well. Drop them into the hot oil and deep fry till golden and crisp. Drain on an absorbent paper.7.
