Stuffed Plantain Boats

STUFFED PLANTAIN BOATS

PREP TIME: 5 MINUTES
COOK TIME: 15 MINUTES
SERVES: 2

INGREDIENTS
2 ripe plantains
400g baked beans
3 cloves of garlic, slices
1 tsp curry powder
1 tsp chili flakes
Pinch of Salt
500ml Vegetable oil

DIRECTION
Peel and make a slit in the whole ripe plantain.
Carefully place them in a pre-heated vegetable oil and fry until cooked through and golden.
Take out and place on a tissue paper to drain excess oil.
In a small saucepan over medium heat, pour vegetable oil in the pan, add the sliced garlic, stir for a minute then add the baked beans and stir.
Add the curry powder, chili flakes, salt, stir and let to simmer for 3 minutes.
Fill the fried plantain with the baked beans sauce and serve.
