SUGAR FREE AND EASY 'TURKISH DELIGHT' STYLE CUBES

In this episode, I'd like to share with you an extremely easy dessert recipe. We call these "very dangerous things" because we eat one of them, whenever we open the fridge door. It is also perfect to serve with Turkish coffee. Tastes like CEZERYE, a traditional Turkish dessert and looks like LOKUM, Turkish delight. Easy to make and healthy!

INGREDIENTS
1 cup walnuts
1 cup sun-dried apricots
(Dried apricots may be used but they taste less sweet)
3 real tablespoonful kaymak (or creme fraiche)
1/4 cup pistachios (or hazelnuts)
1/2 cup coconut flakes
A pinch of salt

DIRECTIONS:
Place walnuts into bowl of a blender and pulse a few times.
Then transfer into a big bowl.
Chop the apricots coarsely and combine with walnuts.
Add a pinch of salt and mix.
Add 3 real tablespoonful kaymak (or creme fraiche) and mix well.
I tried this recipe with plain yoghurt or creme cheese instead of kaymak and they all taste so good, but I think kaymak is the best option :)
Place the mixture into bowl of blender and pulse a few times.
Scrape the sides then pulse again.
Repeat this process 3-4 times, until the apricots are chopped.
Shape mixture into plum-sized balls.
Place 1-2 pistachios in the middle, make balls again.
Dip balls into coconut flakes.
They can be served just like this.
Or you can shape the balls into cubes, to make them look like
LOKUM. (Turkish Delight)
Repeat until all mixture has been used.
Refrigerate at least 2 hours before serving.
Keep in the fridge for up to 'best before date' of the dairy product,
that has been used.
It tastes amazing by the way :)
