A different take on pancakes entirely!SUJI PANCAKESIngredients1 cup semolina ( suji)1 tbsp rice flour½ cup yogurt3 tbsps grated carrot6-8 spinach leaves, shreddedSalt to taste1 tsp cumin seedsCrushed black peppercorns to tasteOil to shallow fryMethod1. Mix the semolina and rice flour in a bowl. Add yogurt and mix well. Cover and set aside for 6-8 hours. 2. Add carrot, spinach leaves, salt, cumin seeds and crushed peppercorns and mix well. You can add little water if required to adjust the consistency. 3. Drizzle little oil on a nonstick tawa. Spread spoonful of batter and spread lightly. Drizzle some oil and allow the underside to cook.4. Serve hot with coconut and tomato chutney.
