Summer Beans Salad Recipe | Easy homemade Summer Side Dish | Eat East Indian

Summer Salads that are protein rich, healthy and easy to put together should be a keeper like this recipe. Its our family favourite. Its a great dish with any summer meal.
I pressure cook the beans with some taco seasoning and add mexican flair by using Chipotle Sea salt, corn and cilantro. Optional- Jalapanoes and paprika can be added in too.

Ingredients/ Method
2 cups of boiled beans ( Pressure cook them with just enough water to soak them and add some salt, pepper and taco seasoning) You can also soak beans overnight.
Other veggies used: Cucumber, Peppers, onions, Cilantro and for dressing: Squeeze of fresh Lemon juice
Spices: Chipotle sea salt and pepper.
Put together everything for a quick snack. it stores well in the fridge too for upto 5 days.
