Summer Orzo Salad by Erwan Heussaff and Mari Jasmine | FEATR

Mari is back and we are making her light summer salad.

Ingredients



1 cup of risoni (orzo)

2 stalks of celery

2 yellow peppers

2 japanese cucumbers

a handful of cherry tomatoes

a handful of mint leaves

1 lemon

olive oil

chilli flakes

sea salt

black pepper



1. Cook the orzo until al dente, drain, add a drizzle of olive oil and leave to cool.

2. Roughly chop the vegetables and mix with the pasta.

3. For the dressing mix the juice of 1 lemon, an equal amount of olive oil, 1 teaspoon of lemon zest, a pinch of chilli flakes, salt and black pepper.

4. Mix it all together and serve!

So i went to a couple of Scampi Trucks in Oahu and i died because it was so good. Here is my attempt to recreate the experience. Of course, these will taste much better if your feet are buried deep in the warm sand.
