As the name suggests, a beautiful and uber popular snack made specially using summer time favourite – Raw mango!SUMMER PANI PURIIngredients1 medium raw mango (kairi)24-30 puffed puris meant for pani puri½ cup fresh coriander leaves1 cup fresh mint leaves2 green chillies1½ tsps pani puri masala½ tsp roasted cumin powderBlack salt to taste10-15 ice cubes½ cup salted boondiStuffing2 medium potatoes, boiled and peeled½ cup boiled green gram sprouts (ankurit moong)½ tsp red chilli powderSalt to tasteRagda½ cup soaked dried white peas (safed vatana), boiled with ¼ tsp turmeric powder and ¼ tsp asafoetida¼ tsp roasted cumin powder¼ tsp red chilli powderSalt to taste2 tsps chopped raw mango2 tbsps chopped fresh coriander leavesTo serve Date and tamarind chutneyMethod1. To make the pani, cut the raw mango into wedges and discard the seed. 2. Put coriander leaves in a blender jar, add mint leaves, green chillies, raw mango wedges and ½ cup water and blend to a fine paste.3. Strain the paste into a large bowl, add 1 cup water, pani puri masala, roasted cumin powder and black salt and mix well.4. Add ice cubes, mix and salted boondi and mix well. 5. To make the stuffing, mash potatoes, boiled green gram sprouts, red chilli powder and salt in a bowl.6. To make the ragda, boiled dried white peas in a bowl, add roasted cumin powder, red chilli powder, salt, raw mango, coriander leaves, and ¼ cup prepared pani and mix well.7.
