Suran Ki Subzi Suran Ki Sabzi during fast is a healthy option to enjoy fasting food. The crisp & soft texture along with the sweetness of jaggery makes the Yam recipe interesting. Ingredient QuantityYam (Suran) peeled and Grated 1 CupGhee 3 tbspCumin Seeds 1 tsp Sesame seeds 1 tbspPeanuts ½ CupRock Salt (Sendha Namak) to tasteRed chilli powder 1 tspJaggery 2-3 tbspFresh coconut grated 1 cup + for garnish Method:1. Soak grated yam in water and keep it aside.2. Heat ghee in a pan; add cumin seeds, sesame seeds and peanuts, mix well.3. Cover and cook for 2-3 min.4. Squeeze the suran from water and add to the pan and mix well.5. Cover and cook for 15 min., stir in between.6. Add salt, red chilli powder and jaggery, mix well and cook till jaggery melts.7. Add grated coconut, mix well and cook for 1 min.8.
