While the fusion sounds strange, it tastes downright delicious.
SUSHI BURGER

Ingredients

1 cup sushi rice
2 tsps vinegar
2 tsps castor sugar
Oil for greasing
1 nori sheet, cut into 4 squares
½ medium English cucumber
1 medium tomato
1 avacado
Lollo rosso leaves as required
Wasabi mayonnaise for drizzling
Salt to taste
12 smoked salmon pieces
Sesame seeds for sprinkling
French fries to serve

Method

1. Heat a non-stick deep pan, add sushi rice and add 2 cups water. Add salt, and mix well. Cover and cook till the rice is completely cooked.
2. Add vinegar and sugar. Mix well and transfer to a plate to allow to cool.
3. Grease the palms of the hands with oil and take a portion of the rice and press it firmly into a ring cookie mould to shape it like a patty. De-mould and set aside.
4. Thinly slice English cucumber, thinly slicetomato. Cut an avocado in half and set aside.
5. For one portion serving, place a rice patty on a serving plate.Drizzle wasabi mayo and tear lollo rosso lettuce leaf and place it on top of the mayo.
6. Slice and add a few pieces of avocado on top. Sprinkle salt and place a little shredded purple cabbage. Place a few slices of cucumber and a few of tomatoes. Place a piece of lettuce and drizzle the mayo on top.
7. Place a few slices of tomato and sprinkle a little salt on top.
8. Place a nori sheet square and place a 3 smoked salmon pieces. Drizzle a little wasabi mayo and place another layer of rice patty. Sprinkle sesame seeds on top and serve.
