Sustainable Beef at the Climate Pledge Arena

For @MollyDeMers, Executive Chef of the @ClimatePledgeArena, sustainability is more than just a buzzword. It's about being mindful in every aspect to create a sustainable environment that can continue to make a positive impact for generations to come. Part of this mindfulness includes engaging in authentic relationships with the farmers of the products being served around the arena. Austin Allred of @RoyalFamilyFarming shares the same goals and is dedicated to the practice of sustainable farming, meaning the beef served in Climate Pledge Arena is not only of the highest quality but the most sustainable. Here Chef uses beef from Austin's farm to make short ribs seared in beef fat and slow cooked with red wine and oranges, and serves it with carrots and chimichurri.
