SWEET CORN CHICKEN SOUPIngredients1¼ cups cream style corn ½ cup sweet corn100 grams boneless chicken breast, boiled and shredded1 tbsp oil2 spring onions, diagonally sliced2½ cups chicken stockSalt to taste ¼ tsp white pepper powder¼ tsp sugarA dash of soy sauce2 tbsps corn starch slurry1 egg white1 tsp vinegarCrushed black peppercorns to tasteSliced spring onion greens for garnishMethod1. Heat oil in a non-stick wok, add spring onions and sauté till translucent. Add cream style corn and mix well. Cook for 1 minute.2. Add chicken stock and mix well. Let it come to a boil.3. Add sweet corn and continue to cook for 2-3 minutes.4. Add shredded chicken and salt, white pepper powder and sugar. Add soy sauce and mix well. Let the mixture come to a boil.5. Add cornstarch slurry, mix well and bring it to a boil6. Add egg white while continuously mixing and cook for 1 minute. Add vinegar and mix well. Take the pan off the heat. 7. Transfer the prepared soup into a serving bowl, sprinkle crushed black peppercorns and garnish with sliced spring onion greens. Serve hot.
