SWEET CORN CHICKEN SOUP

Ingredients

1¼ cups cream style corn
½ cup sweet corn
100 grams boneless chicken breast, boiled and shredded
1 tbsp oil
2 spring onions, diagonally sliced
2½ cups chicken stock
Salt to taste
¼ tsp white pepper powder
¼ tsp sugar
A dash of soy sauce
2 tbsps corn starch slurry
1 egg white
1 tsp vinegar
Crushed black peppercorns to taste
Sliced spring onion greens for garnish

Method

1. Heat oil in a non-stick wok, add spring onions and sauté till translucent. Add cream style corn and mix well. Cook for 1 minute.
2. Add chicken stock and mix well. Let it come to a boil.
3. Add sweet corn and continue to cook for 2-3 minutes.
4. Add shredded chicken and salt, white pepper powder and sugar. Add soy sauce and mix well. Let the mixture come to a boil.
5. Add cornstarch slurry, mix well and bring it to a boil
6. Add egg white while continuously mixing and cook for 1 minute. Add vinegar and mix well. Take the pan off the heat.
7. Transfer the prepared soup into a serving bowl, sprinkle crushed black peppercorns and garnish with sliced spring onion greens. Serve hot.
