Sweet Corn Vegetable Soup | Sanjeev Kapoor Khazana

An extremely famous chinese delicacy, Sweet Corn Vegetable Soup is made with corn kernels and boiled veggies! A fuss free recipe which is a comfort food for the soul.

SWEET CORN VEGETABLE SOUP

Ingredients

½ cup sweet corn kernels
½ cup cream style sweet corn
¼ small cabbage, finely chopped
¼ medium carrot, finely chopped
1 tablespoon oil
4-5 cups vegetable stock
Salt to taste
White pepper powder to taste
½ teaspoon sugar
2 tablespoons cornflour slurry
Chopped spring onion greens for garnishing

Method

1. Heat oil in a non-stick pan. Add corn kernels, cabbage and carrot, mix and sauté for 2 minutes. Add stock, stir and bring to a boil.
2. Add cream style corn, stir to mix and simmer for 1-2 minutes. Add salt, pepper powder and sugar and mix well.
3. Add cornflour slurry, stir and cook till the soup thickens.
4. Garnish with spring onion greens and serve piping hot.
