SWEET CORN VEGETABLE SOUP Ingredients ½ cup sweet corn kernels ½ cup cream style sweet corn ¼ small cabbage, finely chopped ¼ medium carrot, finely chopped 1 tablespoon oil 4-5 cups vegetable stock Salt to taste White pepper powder to taste½ teaspoon sugar 2 tablespoons cornflour slurryChopped spring onion greens for garnishing Method 1. Heat oil in a non-stick pan. Add corn kernels, cabbage and carrot, mix and sauté for 2 minutes. Add stock, stir and bring to a boil. 2. Add cream style corn, stir to mix and simmer for 1-2 minutes. Add salt, pepper powder and sugar and mix well. 3. Add cornflour slurry, stir and cook till the soup thickens. 4.
