SWEETCORN PASTA

Ingredients

1 cup whole wheat penne pasta, boiled
1 tsp butter
½ cup readymade white sauce
1 tsp olive oil
1 small red capsicum, cut into ½ inch cubes
1 small yellow capsicum, cut into ½ inch cubes
1 small green capsicum, cut into cubes
¼ medium broccoli, cut into florets and blanched
¼ cup sweet corn kernels, boiled
Salt to taste
½ tsp red chilli flakes
Crushed black pepper for garnish
Fresh parsley sprig for garnish

Method

1. Heat butter and olive oil in a non-stick pan, add garlic and sauté for a minute on medium heat.
2. Add red capsicum, yellow capsicum and green capsicum in the pan. Sauté for 2-3 minutes. Add white sauce and pasta. Mix well. Cook for 1-2 minutes.
3. Add broccoli, sweet corn kernels, salt and red chilli flakes. Sauté for 2-3 minutes on medium heat.
4. Serve hot, garnished with black peppercorns and parsley sprig.
