Fragrant rice preparation with lots of fresh vegetables.TAHIRIIngredients1½ cups basmati rice, soaked and drained 5-6 small potatoes, peeled and halved12-16 cauliflower florets½ cup green peas2 tablespoons oil1 teaspoon cumin seeds (jeera)10-12 cloves10-12 black peppercorns2-3 black cardamoms1 inch cinnamon1 bay leaf2 medium onions, sliced½ teaspoon turmeric powder1½ teaspoons red chilli powder1 teaspoon cumin (jeera) powderSalt to taste Fresh coriander sprig for garnishing Method1. Heat oil in a deep non-stick pan. Add cumin seeds and let the seeds change colour. 2. Add cloves, peppercorns, cardamoms, cinnamon, bay leaf and onions, mix and sauté till onions turn translucent. 3. Add potatoes and cauliflower florets and mix well. Add turmeric powder, chilli powder, cumin powder and salt and mix. 4. Add sufficient water, mix, cover and cook for 5-6 minutes. Add rice and mix. 5. Add green peas and mix well. Add 3 cups water, stir to mix, cover and cook till fully done. 6. Garnish with coriander sprig and serve hot.
