Tender tamarind leaves chutney is the specialty of Andhra and It is considered to be good for digestion as tamarind leaves act as a laxative. Try out this chutney as it is made by adding some fresh tamarind leaves.TAMARIND LEAVES CHUTNEYIngredients2 cups tamarind leaves, washed1 medium onion1 tsp roasted coriander seeds1 tsp roasted cumin seeds10-12 dried red chillies, chopped¼ cup grated dried coconut1 tsp sesame seeds3 tsps oil¼ tsp turmeric powderSalt to taste1 tbsp tamarind pulp3 tbsps grated jaggery1 tsp mustard seeds15-18 curry leavesMethod1. Dry roast tamarind leaves for 2 minutes.2. Roughly chop onion and place in a grinder jar alongwith coriander seeds, cumin seeds, 5-6 chopped dried red chillies, coconut and sesame seeds.3. Add 2 tsps oil to tamarind leaves alongwith turmeric powder and saute well. Add salt, mix well and cook for a minute. Switch off heat and transfer the sautéed leaves in the grinder jar.4. Add tamarind pulp and jaggery and grind into a coarse chutney adding very little water, if required. Transfer into a bowl.5. Heat 1 tsp oil in a non-stick pan. Add mustard seeds and let them splutter.6. Roughly chop remaining dried red chillies and discard the seeds.7. Add curry leaves and chopped dried red chillies to the pan and add this tempering to the chutney. Mix well.8. Serve as an accompaniment.
