Potatoes with a delicious stuffing shaped like a boat.

TANDOORI ALOO BOAT

Ingredients

2-3 large potatoes (aloo), parboiled with skin
4 tbsps yogurt, whisked
2-3 tsps dried red chilli-ginger-garlic paste
Salt to taste
2-3 tsps lemon juice
150 gms processed cheese
150 gms cottage cheese (paneer)
2-3 tbsps corn kernels, boiled
1 tsp chaat masala
Fresh coriander sprig for garnishing

Method

1. Halve potatoes and scoop out a little from the center of each half.
2. Put yogurt and dried red chilli-ginger-garlic paste in a bowl and mix well. Add salt and lemon juice and mix again. Add scooped out potato halves and mix till they are well coated. Set aside to marinate for 10-12 minutes.
3. Grate cheese into another bowl. Grate cottage cheese into the same bowl. Add corn kernels and chaat masala and mix well.
4. Fill marinated potato halves with this mixture. Spread the remaining marinade over the stuffing.
5. Place the stuffed potatoes in an air fryer and air cook at 180ยบ C for 15 minutes.
6. Arrange on a serving platter, garnish with a coriander sprig and serve hot.
