TANDOORI CHAATIngredients200 grams pineapple, peeled and cut into 2 inch cubes1 medium red capsicum, cut into 2 inch pieces1 medium onion, cut into 2 inch pieces and layers separated1 medium green capsicum, cut into 2 inch pieces250 grams cottage cheese (paneer), cut into 2 inch cubes2 tbsps melted butter1 tsp red chilli powder + for sprinklingBlack salt to taste½ tsp chaat masala + for sprinkling2-3 tbsps oil3-4 lemon wedges4 tbsps pomegranate pearls + for garnish 2 tbsps chopped fresh mint leavesMethod1. In a large bowl, add melted butter, red chilli powder, black salt, chaat masala and mix well. 2. Add pineapple, red capsicum, onion, green capsicum, paneer and mix well. Set aside for 10-15 minutes.3. Alternatively skewer the vegetable-paneer mixture onto wooden sticks. 4. Heat oil in a non-stick tawa, place the skewers on it and cook for 2 minutes on all sides. 5. Transfer the cooked pieces into a large bowl, squeeze lemon wedges, sprinkle chaat masla and red chilli powder. Add pomegranate pearls and mix well.6. Sprinkle chopped fresh mint leaves and mix. Transfer into serving bowls. Garnish with pomegranate pearls and serve immediately.
