Ingredients for Tandoori Masala:
Ginger powder 1 tbsp
Garlic powder 1 tsp
Nutmeg 1 tsp
Red Food color 1 tsp
Cinnamon stick (1 inch)
Fenugreek (dried) 1 tbsp
Cloves 8-10
Mace (small) 1/2 inch
Cumin seeds 2 tbsp
Coriander seeds 4 tsp
Black peppercorns 2 tsp
Black cardamom 2
Green cardamom 2-3
Salt 1 tsp
Red chili powder 1 tbsp

Ingredients for Drumsticks Marination:
Yogurt 1 cup
Drumsticks 6-8
Tandoori masala 3-4 tbsp
Oil 2 tbsp
Turmeric powder 1 tsp
Coal pieces 1-2
Oil (for smoke) 1 tsp
Oil (for frying) 2 tbsp
Butter (for frying) 2 tbsp

Ingredients for Rice:
Water (for soaking) as required
Guard Basmati Rice 2 cups
Chicken stock 3 cups
Salt 1/2 tbsp
Onion (sliced) 1/2 cup
Soaked rice 2 cups
Cinnamon stick (2 inch)
Cloves 1/2 tsp
Black peppercorns 6-8
Ginger garlic paste 1 tbsp
Oil 2 tbsp

Directions for Tandoori Masala Preparation:
1. In a blender add ginger powder. garlic powder, nutmeg, red food color, cinnamon stick, fenugreek leaves, cloves, mace, cumin seeds, coriander seeds, red chili powder, black peppercorns, black cardamom, green cardamom, salt and blend into fine powder. set aside.
Directions for Drumsticks Marination:
2. In a bowl add drumsticks, tandoori masala, yogurt, turmeric powder, oil and mix well. Marinate for 2-3 hours.
3. Now heat oil in a pan and add drumsticks, fry each side until they are fully cooked on low medium flame.
4. Now smoke them for a minute and set aside.
Directions for Rice Preparation:
5. in a bowl add Guard Basmati Rice and water and soak for 25-30 minutes.
6. In a pot heat oil and add onion and saute until changes color. Now add ginger garlic paste and cook for a minute. Add salt, cinnamon stick, cloves, black peppercorns and cook for 1-2 minutes.
7. Now add chicken stock and bring it boil. Add soaked rice and cook until 80% water has evaporated. Now cover and steam on low flame for 10 minutes.
8. Now serve the rice with drumsticks, grilled veggies, tomatoes, chilies.
Preparation time: 10-15 mins
Cooking time: 40-45 mins
