Glen & Julie are testing out Tandoori-Style Chicken recipes ( तंदूरी चिकन नुस्खा ) in the Ooni Pro wood fried pizza oven... भारतीय तंदूरी रेसिपी Glen lost track, and maybe over charred it a little bit, but it still tasted amazing! This recipe was inspired by Anjum Anand's cookbook "I Love India".

Ingredients:
8 skinless chicken thighs or legs or a mix
Juice of 1 lemon
120g ( 125 mL / ½ cup) full-fat plain yogourt
7 - 10 mL (1½–2 tsp) cayenne
10 mL (2 tsp) turmeric
5 mL (1 tsp) garam masala
5 mL (1 tsp) ground cumin
5 mL (1 tsp) coarse salt
30 mL (2 Tbsp) mustard oil (or any veg oil)
4 garlic cloves, crushed
1 green chilli, chopped
15g (roughly the size of your thumb) ginger, grated


Method:
Juice the lemon.
In a bowl mix together the ingredients for the marinade: yogourt, cayenne, turmeric, garam masala, cumin, salt, mustard oil, garlic, chilli pepper, ginger.
Stir that up to fully combine.
Cut slashes in the chicken pieces right down to the bone in 3-4 places to let the marinade penetrate.
Put the chicken in the bowl with the marinade; toss to coat, cover and place in the fridge for 4-5 hours, but overnight would be best.
Preheat you BBQ Grill, oven, tandoor, or pizza oven to high heat.
Place the chicken on the grill, turn it often and move it around to prevent burning.
You want it to be slightly charred around the edges and cooked through to the bone.
Or - place the chicken on a baking sheet under the broiler in your oven, and cook until charred on both sides and cooked through.
