White chicken biryani

Ingredients for Boiled Rice:
Water 7-8 cups
Cumin seeds 1 tbsp
Salt 1 tbsp.
Green cardamom 4-5
Star anise 1-2
Soaked rice 3 cups

Ingredients for Biryani:
Oil 1/2 cup
Onion (sliced) 1 cup
Garlic (chopped) 1 tbsp
Ginger (chopped) 1 tbsp
Whole black pepper 15-20
Green cardamom 4-5
Cumin seeds 1 tbsp
Cinnamon stick 2-3
Black cardamom 3
Chicken 1 kg
Green chili paste 3 tbsp
Coriander powder 1 tbsp
Salt 1 tbsp
White pepper powder 1 tbsp
Yogurt 1 cup
Aloo Bukhara (dried plum) 7-8
Boiled rice
Green coriander (chopped) as required
Mint leaves as required
Lemon slices as required
Green chilies (slit) as required
Kewra water as required

Directions for Boiled Rice Preparation:
1. In a pot heat water and add cumin seeds, salt, green cardamom, star anise and bring it to a boil.
2. Add rice and boil until its 80% done. Strain and set aside.
Directions for Biryani Preparation:
3. In a pot heat oil and add onion. Cook until brown.
4. Add garlic, ginger and cook for a minute.
5. Now add black pepper, green cardamom, black cardamom, cinnamon sticks, cumin seeds and cook for 2-3 mins.
6. Add chicken and cook until chicken changes color.
7. Add green chili paste, coriander powder, salt, white pepper powder and mix it well.
8. Add yogurt and cook for 2-3 mins. Add dried plum and cover and cook until chicken is fully done.
9. Add boiled rice, green coriander, mint leaves, lemon slices, green chilies and kewra water.
10. Cover and steam over low flame for 10-12 mins. Your White Chicken Biryani is ready.

Cooking time: 45-50 mins
