Ingredients:
- 1/2 liter of cow's milk (Junnu Milk)
- 1/2 liter of cow's milk (Normal)
- 1/2 cup jaggery (or to taste)
- 1/2 teaspoon cardamom powder
- 1 tablespoon rice flour
- A pinch of saffron strands (optional)
- Chopped nuts for garnish (such as almonds, pistachios)

Instructions:
1. In a heavy-bottomed saucepan, bring the milk to a boil over medium heat.
2. Reduce the heat to low and let the milk simmer for about 30 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.
3. Meanwhile, in a separate bowl, dissolve the jaggery in a little warm water and set it aside.
4. After the milk has simmered for 30 minutes, add the dissolved jaggery to the saucepan and stir well until it completely dissolves.
5. In a small bowl, mix the rice flour with a little water to form a smooth paste, ensuring there are no lumps.
6. Slowly pour the rice flour paste into the milk while stirring continuously. This helps thicken the Junnu Paalu.
7. Add the cardamom powder and saffron strands (if using) to the milk, and continue stirring for another 5 minutes to blend the flavors.
8. Remove the pan from heat and let the Junnu Paalu cool down to room temperature.
9. Once cooled, transfer the mixture to individual serving bowls or a single large bowl.
10. Garnish with chopped nuts of your choice, such as almonds or pistachios.
11. Cover the bowls with plastic wrap or lids and refrigerate for at least 4 hours or overnight to set.
