Ingredients:
Butter: 2 Tbsp
Oil – 1 tsp
Capsicum: ½ Chopped
Onions: 2 Chopped
Carrot: 1 Chopped
Green Chili: 2 Chopped
Ginger: 1 Inch Piece Chopped
Tomatoes: 4 Chopped
Salt: to taste
Boiled Potatoes, Peas & Cauliflower: ½ cup
Red Chili Powder: 1 tsp
Pav Bhaji Masala: 2 tsp
Kasoori Methi – ¼ tsp
Red Chili Paste – 1 tsp (mixed with 4 tbsp water)
Raw Rice – 2 cups (soaked for 15 mins, then boiled till ¾ done, strained and cooled to room temp.)
Coriander Leaves – 2 tbsp (chopped fine)
Lemon Juice – ½ tsp
Method:
1. Heat up a tawa, add in the butter and the oil. Once hot, add in the onions, capsicum, carrots, green chili and ginger and cook for a minute.
2. Add in the chopped tomatoes & salt, and cook for 3-4 minutes. Next goes in the boiled potatoes, peas, cauliflower along with the red chili powder, pav bhaji masala and kasoori methi and cook for 4-5 minutes.
3. Add in the red chili paste and stir well, next add in rice, coriander leaves, lemon juice and mix well. Cook for 2 minutes, then serve hot!

Note: In the absence of Pav Bhaji Masala, the following ingredients can be roasted & ground together, and 2 tsp can be added to this pulao.
Coriander Seeds – 1 tsp
Whole Red Chili - 8
Fennel seeds – ¼ tsp
Cloves - 4
Black cardamom – 3
Cinnamon – ¼ inch
Cumin Seeds – ½ tsp
Peppercorns – ½ tsp
Poppy Seeds – ½ tsp
Turmeric – 1/8 tsp (to be added after grinding)
Amchoor Powder - 1 tsp (to be added after grinding)
