A popular street food made with spicy veggies and beautiful long grain rice, mixed together and cooked on a hot tawa, makes it an extra special dish!

TAWA PULAO

Ingredients

1½ cups Daawat Pulav Basmati Rice
2 tbsps oil
1 tbsp butter
1 tsp cumin seeds
1 large onion, finely chopped
2-3 green chillies, finely chopped
1 tsp finely chopped garlic
1 inch ginger, finely chopped
1 tsp red chilli powder
¼ tsp turmeric powder
1 tbsp red chilli paste
Salt to taste
2 medium tomatoes, finely chopped
1 tbsp pav bhaji masala
1 medium green capsicum, finely chopped
¼ cup shelled green peas
2 tbsps chopped fresh coriander leaves
2 tsps lemon juice
Roasted papads to serve
Raita to serve

Method

1. Take Daawat Pulav Basmati Rice in a bowl. Add sufficient water and wash for 2-3 times.
2. Add sufficient water and soak for 20-25 minutes. Drain the water.
3. Heat oil and butter in a non-stick shallow tawa. Add cumin seeds and let them change colour.
4. Add onion and mix well. Cook till it turns translucent. Stir in the green chillies, garlic and ginger and mix well. Cook till the onion turns golden brown.
5. Add red chilli powder, turmeric powder, red chilli paste and salt and mix well. Cook for 1-2 minutes.
6. Stir in the tomatoes and sauté for 3-4 minutes or till the tomatoes turn soft and pulpy.
7. Sprinkle the pav bhaji masala and mix well. Add green capsicum, and green peas and mix. Cook for 1 minute.
8. Heat sufficient water in a deep pan. Add salt and the soaked rice. Mix and cook till almost done.
9. Strain the rice and add into the prepared masala and gently mix till well combined.
10. Add coriander leaves and lemon juice and mix well.
11. Transfer on to a serving plate, garnish with coriander sprig and serve hot with papads and raita.
