TAWA SABZIIngredients6-7 small lady fingers, top trimmed and shallow fried8-10 cauliflower florets, blanched in turmeric water and shallow fried3 small brinjals, quartered and shallow fried10-12 baby potatoes, boiled, peeled and shallow fried¼ cup green peas1 small tomato, deseeded and cut into ½ inch pieces1 medium capsicum, cut into 1 inch pieces and shallow fried2 tbsps oil1 medium onion, finely chopped½ tbsp ginger-garlic paste½ tbsp Kashmiri red chilli paste¼ tsp turmeric powder1 tsp red chilli powder½ tbsp Tata Sampann Pav Bhaji Masala1 cup fresh tomato pureeSalt to taste2 tsps butter1 tbsp chopped fresh coriander leaves + for garnishRotis to serveMethod1. Heat oil in a non-stick wide tawa, add onion and sauté till golden brown. Add ginger-garlic paste and Kashmiri red chilli paste and sauté for 1-2 minutes.2. Add turmeric powder, red chilli powder and Tata Sampann Pav Bhaji Masala and mix well.3. Add tomato puree and salt and mix well. Cook till the moisture evaporates and oil separates, sautéing continuously.4. Add butter and chopped coriander and mix well. Gather the mixture in the centre of tawa and arrange lady fingers, cauliflower, brinjals, baby potatoes, green peas, tomato and capsicum on the edges on the tawa.5. Sauté the vegetable of your choice with the prepared mixture and serve hot with rotis.
