THAI CHICKEN AND MANGO CURRY - (Serves - 4)Ingredients450 gms chicken on bone, cut into small pieces2 ripe mangoes2 tsps oil1 tbsp Thai red curry paste1 medium onion, finely chopped1 inch ginger10-12 button mushrooms, sliced1 cup vegetable stock½ tbsp brown sugar1½ tsps fish sauce½ cup coconut milk8-10 basil leavesMethod1. Peel mangoes.2. Heat oil in a non-stick pan. Add red curry paste and saute. Add onion and saute well.3. Roughly chop ginger and add, mix and saute well.4. Add mushrooms, mix and cook on high heat.5. Add chicken pieces and mix well. Add vegetable stock, stir, cover and cook.6. Slice peeled mangoes.7. Add brown sugar, fish sauce and coconut milk, reduce heat and mix well.8. Add basil leaves and mango slices and mix well. Cover and cook on low heat till the chicken is cooked.9. Serve hot.
