Chicken pieces cooked with lot of fresh vegetables in freshly made thai green curry.THAI GREEN CHICKEN CURRYIngredients200 grams boneless chicken, cut into 1 inch pieces½ cup Thai green curry paste2 tablespoons oil1 small yellow zucchini, cut into triangles1 small green zucchini, cut into triangles12-16 broccoli floretsSalt to taste2 cups coconut milk 12-16 pea brinjals 1 small green capsicum, cut into triangles1 small red capsicum, cut into trianglesZest of 1 kaffir lime2-3 fresh red chillies, diagonally sliced5-6 fresh basil leaves, hand torn1 tablespoon palm sugarMethod1. Heat oil in a non-stick pan. Add green curry paste and sauté till fragrant. 2. Add chicken pieces, yellow and green zucchini and broccoli florets and mix well. Add coconut milk, stir to mix, cover and bring to a boil. 3. Add pea brinjals, green and red capsicum and mix. Add kaffir lime zest, red chillies, basil leaves and palm sugar, mix well and cook till fully done. 4. Serve hot.
