Thai Green Curry Paste | Sanjeev Kapoor Khazana

THAI GREEN CURRY PASTE

Ingredients

1 small bunch fresh coriander
2 tablespoons coriander seeds
1 tablespoon cumin seeds (jeera)
1 tablespoon white peppercorns
10-12 fresh coriander roots
4-5 green chillies
10-12 shallots
1 inch galangal, roughly chopped
2 inch lemongrass stalk, cut into pieces
8-10 garlic cloves
6-8 kaffir lime leaves
1 inch fresh turmeric, roughly chopped
Zest of 1 kaffir lime

Method

1. Blend together coriander leaves, coriander seeds, cumin seeds, peppercorns, coriander roots, green chillies, shallots, galangal, lemongrass, garlic, kaffir lime leaves, turmeric and kaffir lime zest with water as required to a smooth paste.
2. Use as required.
