Explore the flavors of Thailand through these fried chicken lollipops engulfed in a rich Thai sauce that is a blend of both sweet and spicyTHAI LOLLIPOPIngredients10-12 chicken lollipopsSalt to tasteCrushed black peppercorns to taste½ tbsp ginger-garlic paste2 tsps red chilli paste2 tsps soy sauce1 egg2 tbsps refined flour1½ tbsps corn starch2 tbsps oil + for deep frying2-3 spring onion bulbs, finely chopped5-7 garlic cloves, finely chopped½ inch ginger, finely chopped2 tbsps red Thai curry paste2 tsps red chilli sauce1 medium carrot, sliced1 tbsp corn starch slurry1 small capsicum, cut into cubes1 small onion, cut into quarters2 tbsps chopped spring onion greens + garnishMethod1. In a bowl, add chicken lollipops, salt, crushed black peppercorns, ginger-garlic paste, red chilli paste, soy sauce, break egg, refined flour and corn starch, mix well. Set aside to marinate for 15-20 minutes.2. Heat sufficient oil in a non-stick pan, deep fry the marinated lollipops till golden and crispy. Drain on absorbent paper.3. Heat oil in a non-stick pan, add spring onion bulbs, garlic, ginger, and sauté for 1 minute.4. Add Thai curry paste, mix well and cook for 1-2 minutes. Add remaining soy sauce, red chilli sauce, mix well.5. Add carrot, and mix well. Add ½ cup water and mix well. Add salt, crushed black peppercorns, mix well. Add corn starch slurry and mix well.6. Add capsicum, onion and cooked chicken and mix well. Add spring onion greens, and take it off the heat.7.
