Explore the flavors of Thailand through these fried chicken lollipops engulfed in a rich Thai sauce that is a blend of both sweet and spicy

THAI LOLLIPOP

Ingredients

10-12 chicken lollipops
Salt to taste
Crushed black peppercorns to taste
½ tbsp ginger-garlic paste
2 tsps red chilli paste
2 tsps soy sauce
1 egg
2 tbsps refined flour
1½ tbsps corn starch
2 tbsps oil + for deep frying
2-3 spring onion bulbs, finely chopped
5-7 garlic cloves, finely chopped
½ inch ginger, finely chopped
2 tbsps red Thai curry paste
2 tsps red chilli sauce
1 medium carrot, sliced
1 tbsp corn starch slurry
1 small capsicum, cut into cubes
1 small onion, cut into quarters
2 tbsps chopped spring onion greens + garnish

Method

1. In a bowl, add chicken lollipops, salt, crushed black peppercorns, ginger-garlic paste, red chilli paste, soy sauce, break egg, refined flour and corn starch, mix well. Set aside to marinate for 15-20 minutes.
2. Heat sufficient oil in a non-stick pan, deep fry the marinated lollipops till golden and crispy. Drain on absorbent paper.
3. Heat oil in a non-stick pan, add spring onion bulbs, garlic, ginger, and sauté for 1 minute.
4. Add Thai curry paste, mix well and cook for 1-2 minutes. Add remaining soy sauce, red chilli sauce, mix well.
5. Add carrot, and mix well. Add ½ cup water and mix well. Add salt, crushed black peppercorns, mix well. Add corn starch slurry and mix well.
6. Add capsicum, onion and cooked chicken and mix well. Add spring onion greens, and take it off the heat.
7. Transfer to a serving plate, garnish with chopped spring onion greens and serve hot.
