THAI PANI PURI

Ingredients

24 puffed puris
½ cup fresh coriander leaves
10-12 fresh coriander roots, cleaned and washed
3-4 kafir lime leaves
1½ inch galangal, sliced
2-3 green chillies
3 tsps roasted cumin seeds
4 tsps coriander seeds
1 tsp white peppercorns
Sea salt to taste
1 tsp black salt
4 tsps palm sugar
1 kafir lime
Ice cubes as required
Filling
½ cup shredded raw papaya
1 small tomato, thinly sliced
1 spring onion, cut into thin strips
2½ tsps brown sugar
A pinch of sea salt
1 fresh red chilli
1 tsp tamarind paste
1 tsp soy sauce
2 tbsps roasted peanuts
½ lemon juice
3 tbsps bean sprouts

Method

1. In a mortar pestle, add brown sugar, sea salt, chop and add red chilli. Add tamarind paste, soy sauce, roasted peanuts, and squeeze lemon juice in it. Coarsely pound the mixture.
2. Add raw papaya, tomato, spring onion, bean sprouts, and mix well. Set aside.
3. For the thai flavored water, add coriander leaves, coriander roots, kaffir lime leaves, galagal, green chillies, roasted cumin seeds, coriander seeds, white peppercorns, sea salt, black salt, palm sugar, and zest kafir limes in a blender jar.
4. Add ice cubes and 1½ cups water. Blend to a fine mixture and strain it. Add ice cubes and set aside.
5. To serve, make a hole in the centre of the puri, add a portion of the prepared stuffing and pour in the prepared pani. Serve immediately.
