Try this amazing recipe, you will love it!THAI PANI PURIIngredients24 puffed puris½ cup fresh coriander leaves10-12 fresh coriander roots, cleaned and washed3-4 kafir lime leaves1½ inch galangal, sliced2-3 green chillies3 tsps roasted cumin seeds4 tsps coriander seeds1 tsp white peppercornsSea salt to taste1 tsp black salt4 tsps palm sugar1 kafir limeIce cubes as requiredFilling½ cup shredded raw papaya1 small tomato, thinly sliced1 spring onion, cut into thin strips2½ tsps brown sugarA pinch of sea salt1 fresh red chilli1 tsp tamarind paste1 tsp soy sauce2 tbsps roasted peanuts½ lemon juice3 tbsps bean sproutsMethod1. In a mortar pestle, add brown sugar, sea salt, chop and add red chilli. Add tamarind paste, soy sauce, roasted peanuts, and squeeze lemon juice in it. Coarsely pound the mixture.2. Add raw papaya, tomato, spring onion, bean sprouts, and mix well. Set aside.3. For the thai flavored water, add coriander leaves, coriander roots, kaffir lime leaves, galagal, green chillies, roasted cumin seeds, coriander seeds, white peppercorns, sea salt, black salt, palm sugar, and zest kafir limes in a blender jar.4. Add ice cubes and 1½ cups water. Blend to a fine mixture and strain it. Add ice cubes and set aside.5. To serve, make a hole in the centre of the puri, add a portion of the prepared stuffing and pour in the prepared pani. Serve immediately.
