Tikkar Parantha | Sanjeev Kapoor Khazana

A scrumptious parantha recipe perfect for breakfast, lunch or dinner.

TIKKAR PARANTHA

Ingredients

½ cup makai ka atta
½ cup whole wheat flour + dusting
½ cup gram flour (besan)
1 medium onion, chopped + sprinkling
1 medium tomato, chopped + sprinkling
1½ freshly chopped coriander leaves
1 tsp ginger-green chilli paste
4-5 garlic cloves, chopped
¼ tsp turmeric powder
Salt to taste
1 tsp ghee + Applying
Green chutney to serve

Method

1. In a large bowl, add makai ka atta¸ whole wheat flour, besan, onion, tomato, chopped coriander, ginger-green chilli paste, chopped garlic, turmeric powder, salt, and 1 tsp ghee. Add sufficient water and mix well, knead to stiff dough.
2. Cover with a damp muslin cloth and set aside. Divide the dough into equal portions and roll them into balls.
3. Dust a little flour on the worktop, flatten the dough ball and roll it into a disc.
4. Heat a non-stick tawa, place the prepared parantha on it, sprinkle a little chopped onion, tomato, and press them gently and cook till base is golden brown.
5. Flip and apply a little ghee on top and cook for 1 minute. Flip and apply ghee and cook for 1 minute. Take it off the heat.
6. Serve hot with green chutney.
