Tomatoes, red capsicums and garlic grilled together and ground with red chillies, almonds and malt vinegar

TOMATO AND ALMOND SAUCE

Ingredients

6 medium red tomatoes
1 cup blanched and peeled almonds
2 tbsps oil
15-20 garlic cloves
1½ medium red capsicums
3-4 dried red chillies
2 tbsps malt vinegar
Salt to taste
Corn chips, as required

Method

1. Heat oil in a non-stick grill pan and add garlic cloves. Quarter red capsicums and add to the pan.
2. Cut 4 slices from each of 4 tomatoes from four sides leaving the centre portion. Add these slices in the grill pan and grill.
3. Roughly chop remaining tomatoes and put into a mixer jar along with the centre portions of the 4 tomatoes and grind.
4. Add dried red chillies, almonds, malt vinegar and salt.
5. Turn the capsicum and tomato pieces in the grill pan and cook on the other side.
6. Remove tomatoes and garlic from the grill pan and add in the mixer jar and grind.
7. Add ¾ cup water to the grill pan and let the capsicums cook. When the capsicums are cooked, add in the mixer jar and grind till smooth.
8. Pour into a serving bowl and serve as a dip with corn chips or with vegetable sticks.
