The Tomato Upma is made with everyday ingredients and is absolutely no-fuss. Yet, it tastes so awesome because of the traditional tempering and the characteristic flavour of tomatoes. Preparation Time: 10 minutes.Cooking Time: 11 minutes.Serves 4. ¾ cup roughly chopped tomatoes1 cup semolina (rava / sooji)2 tbsp oil1 tsp mustard seeds (rai / sarson)1 tsp urad dal (split black lentils)4 curry leaves (kadi patta)½ cup finely chopped onions1 tsp chilli powder1 tsp sugarSalt to taste2 tbsp finely chopped coriander (dhania) 1. Combine the tomatoes in a mixer and blend to a smooth pulp. Keep aside.2. Heat the oil in a deep non-stick pan, add the mustard seeds, urad dal and curry leaves and sauté on a medium flame for 30 seconds.3. Add the onions and sauté on medium flame for 2 minutes.4. Add the semolina and sauté on a medium flame for 4 minutes.5. Add the tomato pulp, chilli powder, sugar, salt and coriander, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.6. Add 3 cups of hot water, mix well and cover with a lid and cook on a medium flame for 2 minutes, while stirring occasionally. Serve immediately.
