Tortellini Pasta Salad

Cheese-filled tortellini, Italian salami, plenty of fresh chopped veggies, and a delicious homemade Italian dressing to finish it off this tortellini pasta salad is a fresh and fun twist on a traditional pasta salad!

Ingredients

20 ounces cheese tortellini
8 ounces cubed fresh mozzarella cheese
4 ounces sliced black olives
4 ounces cubed salami
1 green bell pepper seeded and diced
1/2 cup red onion, diced
1 zucchini, diced
1/4 cup chopped pepperoncinis
1/2 pint cherry tomatoes halved

Dressing:
2/3 cup olive oil
1/8 cup white vinegar
1/8 cup lemon juice
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon sugar
1/2 teaspoon dried parsley
1/4 teaspoon black pepper

Instructions

1 Cook tortellini to al dente according to package directions. Rinse with cold water and drain. Add to a large mixing bowl. Pour half the dressing right onto the pasta to ensure they do not stick.

2 Combine chilled tortellini with mozzarella, olives, salami, bell pepper, red onion, zucchini, pepperoncini, and tomatoes in a large mixing bowl or serving bowl.

3 For the dressing, in a small mixing bowl, whisk together olive oil, vinegar, lemon juice, oregano, salt, onion powder, garlic powder, sugar, parsley, pepper, and basil. Mix well.

4 Pour dressing over salad and stir to combine. Refrigerate until chilled, at least 1 hour. Serve cold.
